Jaggery is a unique sugar produced from the sap of Palmyra palm.  Men trained in climbing palm trees tap sap from spathe on the crown of the palm. The sap gathered is filtered and cleaned. The cleaned sap is then poured into large shallow round-bottom vessels or huge earthen pots and heated up to 200^oCelsius.
